I am always creating new treats for the week, this weeks new recipe trial is Blueberry, Banana and Oat baked slice.
Simple and Delicious - it makes 12 serves
Ingredients:
1 1/2 cups of organic rolled oats
1 medium organic banana
3/4 - 1 cup of organic blueberries (frozen is fine)
Organic Cinnamon - 1/2 teaspoon
10 ml of organic maple syrup
5 organic Medjool dates
(it doesn’t have to be organic, I made the change to certified organic a year ago for my health)
Method
Preheat oven to 200°C/180°C fan-forced. Line 1 baking tray 20 cm x 20 cm
Blitz one cup of oats in the food processor to create a course oat flour
Mix the cinnamon, 1/2 cup of oats and the course oat flour into a bowl and mix the cinnamon through the oats, add the blueberries and mix again
Mash the banana in a bowl or blitz it in the food processor and add to the oats and mix well
Take the seeds out of the dates and soak in two tablespoons of warm water for a few minutes until soft and blitz in the food processor
Add the dates in with the oats, bananas and blueberries and mix until combined
Drizzle on 10 ml of the maple syrup and give one final mix
Scoop into the baking tray a spread evenly
Bake in the oven for 15-20 minutes or until just firm (slightly golden)
Allow to cool and cut into 12 pieces
